Alice Medrich, master teacher and chocolatier from Berkeley, CA, visits Julia Child in her kitchen. For this program, Medrich creates a chocolate genoise raspberry ruffle cake. She demonstrates how to cut the cake, and then layer the slices with cr©·me fraiche, melted chocolate, rum syrup, and raspberries in an adjustable pan. Chilled, fan-shaped chocolates are the decorative toppings. Also discussed are tips for working with chocolate.
